Vegan Ramen

Here’s the deal.  I’m poor, and ramen is cheap. At HEB, the running cost is ten cents a packet. TEN CENTS.   The problem is that all the flavors it comes in are non-veg.  So instead of lamenting over unusable meatflavoredmsg, I do this:

After water is at roaring boil, add noodles and cook for a about minute.
Add spinach to noodles and water.
Drain, reserve about a cup of water.
In a wok, heat  1 tbl oil, minced garlic, and red pepper flakes – about a minute. Don’t burn garlic!
Add noodles/spinach.
Add soy sauce and rice wine vinegar to taste.
Gradually add in a bit of water as necessary -so that the noodles don’t stick together.
Cook for about 2 minutes.

EAT UP!

It’s so simple and quick -perfect for when you’re in a hurry.

Even more simple: drain noodles and mix in some House of Tsang Spicy Schezuan Sauce. It’s uber delicious.


Season 7 episode 5 of The Simpsons features Lisa becoming a vegetarian. It’s such a cute episode, and needless to say, as a veggie in a fam of omnivores -I can totally relate. I totally recommend getting it off of iTunes.


The Post Punk Kitchen is back with their brand-new book featuring yummy vegan cupcakes taking over the world. The recipes in here look delish! I’m more of a cookie person myself, but I’ll have to try them asap.


This is a twist on the fav General Tso’s Chicken. Before you scoff, try it. It will taste like the real thing, really!

Ingredients:
1 box of firm tofu
egg substitute for 1 egg (see method)
3/4 cup cornstarch
1 Tablespoon oil for frying (vegetable, sesame, or peanut all work well)
3 bunches green onions, chopped
1 Tablespoon minced ginger
2 Tablespoon minced garlic
1.5 cup mock chicken broth (or use veggie stock/broth)
4 T soy sauce
3 T sugar (add more during cooking if you want it sweeter)
red pepper flakes to taste
1 T rice wine vinegar

Method:
Tofu Prep: Drain, dry, press and freeze tofu. After tofu is frozen, allow to thaw for about 20 minutes. Gently squeeze out excess water. Cut tofu into 1 inch chunks.

If using Enrgy egg replacer for 1 egg, add 3 Tablespoons of water; otherwise, mix 1 tbl of cornstarch or arrowroot powder and add 5 tablespoons of water. Dip tofu in egg mixture, Then in cornstarch.

In a separate bowl, add mock chicken broth, soy sauce, sugar,vinegar, and red pepper.

Pan fry tofu until golden and crisp. Set aside.

Add green onions, ginger and garlic to the pan, saute for a few minutes (until fragrant), stirring constantly. Add sauce mixture. Gradually sprinkle in about a tablespoon of cornstarch so that sauce thickens. Add fried tofu and steamed broccoli, mix in.

Serve immediately with short grain brown rice! Yum!

VEGAN yarn!

Yes, I know there are plenty of vegan yarns out there. But this is actually called Vegan!
I have to admit that I am sort of in love with felting. But now that I know the horrors that sheep have to go through, I probably have to give up my lovely wool. However, this is definitely cheering me up – how awesome does that look?

I had the luxury of going to Real Food Daily while visiting my Aunt in California. Located in Santa Monica, RFD is completely vegan, although you will constantly be asking the waiter if it is or not because the food tastes like non-vegan food. I had the club sandwhich, which substituted tempeh for bacon and it tasted like the real thing. I was uber impressed. The cheesecake had everyone asking how they accomplished such yumminess without the cream cheese!

I’ve seen better, and I’m not sure how I feel about the rubber toe -but these shoes are VEGAN! And it’s not exactly easy to find animal-free shoes on a budget.


So I don’t think I want to stop being vegan. I saw some horrible, sad, just awful pictures at Farm Sanctuary’s website: noveal.org. Also, on PETA’s Vegcooking.com there’s a really fun (not exactly healthy) menu that looks delicious! I’m going to have to try this stuff and post pictures. Among the deliciousness are Olive & Sundried Tomato Tapenade and “Gorgonzola” Arancini.

At a family Thanksgiving party last year, my brother’s best friend (who plans on opening a his own restaurant) made these amazing looking Rissotto balls. Unfortunately they were cooked in chicken stock and had cheese in the center so I couldn’t try them. So I’m really excited to find this veganized version. But where the hell am I supposed to find soy Gorgonzola????
